Belonging to a warehouse club can save you a lot of money on groceries. Of course, not everything is a better price than you can find at a grocery store, but many items are.
I’m a member of Costco, and I buy almonds in bulk whenever I go. I eat almonds plain, but I also love using them in recipes. 3 pounds of almonds at my local Costco costs $18. At $6 a pound, that’s much cheaper than I can find them anywhere else.
I’m a big fan of both almond milk and almond butter, and I make both of these items myself instead of buying them pre-made from the store.
I try not to consume cow’s milk, as it makes me congested and upsets my stomach. Almond milk has more calcium than cow’s milk, and doesn’t cause me the same issues. I like almond milk, but the pre-made types tend to taste watered down. I can make my own almond milk for about the same price as buying it from the store, but it tastes much, much better. The price would be much cheaper if you add as much water as store-bought brands.
All you need to make your own almond milk is a blender, almonds, cheesecloth (or nut milk bag), and water. Salt, vanilla, and sweeteners are optional. Here’s the recipe I use:
Soak 1 cup almonds in water for 2 hours or overnight.
Drain and rinse almonds
Transfer almonds to blender and add 3-4 cups water
Add dash of salt, 1/4 teaspoon of vanilla, and 1 teaspoon honey (optional)
Blend mixture together on high for 2 minutes
Pour mixture from blender into pitcher covered in cheesecloth. I use a nut milk bag instead of cheesecloth, as it’s a little less awkward. You could also use the end of a pair of nylon pantyhose.
Dispose of almond mixture (or search on Google for recipes to use this mixture) and refrigerate milk
The almond milk will last for 3-4 days in the fridge. I know this sounds like a lot of steps, but it should only take a few minutes once you get used to the process. Believe me, you won’t want to go back once you realize how much better this tastes than store-bought almond milk.
I love almond butter, but I don’t love the price. A 16 ounce jar costs somewhere between $10 and $15 at my local grocery store. I can make the same amount for around $6. You’ll need a food processor, vegetable oil, and almonds. Here’s an easy recipe:
Preheat oven to 250 degrees
Bake 3 cups of almonds on baking sheet in oven for 15 minutes
Transfer warm almonds into food processor and add 1-2 tablespoons of vegetable oil
Add a dash of salt (optional)
Process until smooth, scraping down the sides as needed
Transfer to a mason jar or tupperware container
Many of the recipes I’ve seen online say you need to run your food processor for 10-15 minutes to get the right consistency. But I have a strong Hamilton Beach food processor that I recently purchased on Amazon for $50. Processing the almonds only takes about two minutes in this food processor.
